Shrimp & Green Beans

Ingredients:

1 3/4 lbs medium shrimp, peeled and deveined

1/4 tsp of Old bay Seasoning

1/2 TBsp Onion Powder

1/2 tbsp garlic powder

1/4 C chicken stock (plain, unflavored)

8 tsp butter*

Juice of one lemon (or more to taste)

nonstick cooking spray

Instructions

Spray a large skillet with nonstick cooking spray and place over medium-high heat. Add shrimp and Dash of Old bay Cook, stirring occasionally until pink, about 2-3 minutes. Scoop out shrimp into a dish & set aside.

Add the Garlic & Onion powders to the skillet and cook, until fragrant, about 1 minute. Stir in the chicken stock, and lemon juice. Bring to a boil, reduce heat and simmer until liquid is reduced by half (about a minute or so.) Stir in butter until melted

Stir in shrimp and gently toss to combine.

Serve immediately, garnished with parsley if you desire.

I served the above with three servings of frozen green beans

Top all with a lite sprinkle of Parmesan

4 leanest servings, 2 healthy fats, and 3 condiments. (Green beans = 3 green servings)
